Stremio does sequential downloading of torrents in order to stream them, sequential downloading is always slower then normal torrent downloading, to put it bluntly: a normal torrent download does not care what part of the torrent it downloads, so it will always download whichever part is currently available at higher speeds, with sequential downloading the torrent parts that are one after the other are preferred, this obviously slows down the speed but is better for streaming
the second thing you are not considering is the maximum connections used, Stremio has a small number of maximum connections enabled by default, this helps to not clog your internet (especially when on WiFi which has a limited number of consecutive connections), if you are on Desktop though (as opposed to Android), you can tweak the torrent settings manually by following this guide
the third thing, although you probably did consider this, is that you need to choose the torrents with more peers (the little human icons in the stream results) and also with a lower file size (in MB / GB) for improved streaming speeds
